In 2007 top Scottish chef Nick Nairn announced that he would build a six star culinary leisure complex in Scotland. Possible sites included Aberdeen, Edinburgh and Glasgow. Aberdeen won and Nick Nairn chose the beautiful countryside of Royal Deeside in Aberdeenshire. His new Nick Nairn cookery school will be built at the grounds of the Inchmarlo golf course near Banchory in Aberdeenshire.
The £1.5 million development will include a Nick Nairn restaurant within the 1.2 acre site. This second Nick Nairn cook school will be about 6458 square feet and for his recipes he will source the food locally throughout Royal Deeside and for his famous Nick Nairn Cullen Skink recipe from the nearby North East ports. The new Nick Nairn school will be designed by the McColl Architects who are based in Aberdeen City and is to be built and opened by 2009. Nick Nairn hopes to open four more cookery schools over the following five years.
The first Nick Nairn cooking school was opened in the year 2000 at Port of Menteith near Stirling in Scotland. A typical Nick Nairn recipe includes the freshest Scottish ingredients.

Nick Nairn on TV
Nick Nairn is the presenter of the BBC Scotland Landward TV programme on BBC2. He also appears on Ready Steady Cook and took part in the BBC programme the Great British Menu where he won a place to go on to cook for Queen Elizabeth II as part of her 80th birthday celebrations. There were 250 guests at the function at Mansion House. Nick cooked a Roe venison for her main course.
